Easy Cheesy Fruity Pancakes



Ingredients
Your favorite Pancake mix (I use Aunt Jemima Original & therefore my recipe is based on that)
1 cup of that mix
3/4 cup milk
1 tbsp oil
1 egg
7.5 ounces ricotta cheese (more if you like even fluffier/whippier, like me)
1 banana
Strawberries
Blueberries

These measurements make 10-12 pancakes.

Instructions
Follow the instructions of the pancake mix in a medium-large bowl.
Then mix in the ricotta cheese.
Mush banana, add to mix.
Chop/slice up as many strawberries as you see fit. (My rule is to spoon up several spoonfuls of batter and you have at least 1-2 strawberry slices a spoonful, then you're good).
Add blueberries as you see fit (no personal rule, I love blueberries).

On medium heat, use a pan to bake the pancakes.  I use a 12-inch round flat pan (I do not know names of cookware!).  Flip, done.  I hate syrup, so I eat plain or with butter/margarine.  I lovelovelove biting in to the pancakes and having the warm gooey blueberries pop and release their delicious, healthy juices.  

Tip: for extra fluff, barely cook batter just enough to cook the egg, essentially.
