Recipe: Pseudo-Caramelized Onion Mashed Potatoes

Steak with sauteed sweet onions, red peppers, and mushrooms
and a side of pseudo-caramelized onion mashed potatoes.
[Ignore the bad quality of the picture. I was in a rush.]

Time: ~30 minutes
Level of difficulty: extremely easy
Deliciousness: a surprising 5/5
(I am not a steak person.)

The steak & sauteed veggies are easy to do and very subjective in the making.

Pseudo-Caramelized Onion Mashed Potatoes
Ingredients
1-1.5 russet potatoes per person
1 onion
Brown sugar
Olive oil
1/2 cup milk
1/4 cup melted butter
Favorite seasoning

Instructions
1. Peal and cut potatoes in to quarters. Fill stockpot with potatoes and enough water to cover the potatoes. Boil water, then set to low. Wait until tender.
2. Meanwhile, cut onion into slices. Put in saucepan over medium heat with olive oil and butter. Cook until they are losing some of their color add then add brown sugar to pseudo-caramelize. Continue to cook until they are somewhat golden-y translucent. Add salt and pepper to taste.
3. Mix milk and butter together.
4. Put potatoes in mixing bowl, blend with electronic mixer. Slowly add milk and butter. Also add whatever delicious seasoning: garlic salt, salt, pepper, oregano, etc. It's all fair game really.
5. Add onions to potatoes.
6. Enjoy easy, delicious, different-than-the-run-of-the-mill mashed potatoes.
